Coarse salt | 1 Cup (16 tbs) | |
Brown sugar | 1/2 Cup (8 tbs) , packed | |
Sweetened dried cranberries | 1 Tablespoon , chopped finely | |
Orange zest | 1 Tablespoon | |
Dried apples | 1 Tablespoon , chopped | |
Peppercorns | 2 Teaspoon | |
Dried thyme | 1/2 Teaspoon | |
Dried sage | 1/2 Teaspoon | |
Dried rosemary | 1/2 Teaspoon | |
Garlic powder | 1/8 Teaspoon | |
Red pepper flakes | 1/8 Teaspoon |
MAKING
1. In a bowl, combine all ingredients, and stir well to mix.
2. In a clean dry jar, transfer the brine mix and secure with tight fitting lid.
SERVING
3. Use this mix to brine a turkey.
TIPS
This recipe makes enough brine mix for an 18 to 20-pound turkey.
You can also store brine mix in a zip lock bag.
