Spice Cake Mix
|Unbleached flour||8 Cup (128 tbs), sifted|
|Sugar||2 1⁄4 Cup (36 tbs)|
|Baking soda||2 1⁄2 Teaspoon|
|Baking powder||2 Tablespoon|
|Powdered ginger||3 Tablespoon|
|Ground cinnamon||3 Tablespoon|
|Ground cloves||1 Teaspoon|
|Salt||1 1⁄2 Teaspoon|
|Shortening||2 1⁄4 Cup (36 tbs)|
1) In a large bowl, add flour, sugar, baking soda and powder, ginger, cinnamon, cloves, and salt to sift together for 2 times.
2) With a pastry blender or two knives, cut in shortening to the mixture until it looks like cornmeal.
3) Use to prepare cake or store in airtight container in cool, humid-free place for 6 months.
