A Good Batter Mix
|Flour||3⁄4 Cup (12 tbs)|
|Cornstarch||1⁄4 Cup (4 tbs)|
|Beer/Water||3⁄4 Cup (12 tbs)|
|Baking powder||3⁄4 Teaspoon|
|Oil||6 3⁄4 Teaspoon|
Combine all ingredients in a large bowl.
Mix well until batter is smooth and light.
If water is used, increase baking powder to 11/4-1 1/2 teaspoons.
Important message! It is very common to deep-fry batter foods a second time in order to achieve an extra crispy texture.
To do this, deep-fry once, let food cool thoroughly, then deep-fry a second time over high heat for 45 seconds to 1 minute
