Frosty Mint Cubes
|Crushed pineapple||2 Can (20 oz)|
|Unflavored gelatin||2 Teaspoon|
|Mint jelly||1⁄2 Cup (8 tbs)|
|Whipped cream||1 Cup (16 tbs)|
|Green food coloring||1 Teaspoon|
Drain pineapple, reserving juice.
Soften gelatin in juice; add jelly and salt.
Heat, stirring constantly, until gelatin dissolves and jelly melts.
Chill until mixture is thick and syrupy.
Fold in whipped cream; tint with few drops of food coloring.
Freeze until firm.
Cut into cubes or slices to serve.
