After Dinner Mints
|Peppermint flavoring||3 Drop|
|Food coloring||1 Teaspoon|
|Confectioner's sugar||1 Cup (16 tbs)|
|Soft butter||1 Teaspoon|
Combine egg white, cream, vanilla, flavoring and food coloring.
Add sugar all at once; mix well.
Blend in butter; shape right consistency to roll into small balls, adding more sugar, if needed.
Arrange balls on waxed paper-lined cookie sheet; press each ball with tines of fork dipped in powdered sugar.
Let stand overnight to form crust; pack in tins with waxed paper between each layer.
May be frozen and kept for several months.
