Candied Mint Leaves

Ingredients
  Mint leaves   (as required)
  Egg white 1
  Sugar 1⁄2 Cup (8 tbs)
  Peppermint oil 6 Drop
Directions

Remove mint leaves from stems; coat both sides with slightly beaten egg white.
Combine sugar and pepper- mint oil; dip leaves in sugar, coating well.
Place on waxed paper-lined cookie sheet.
Bake in 300-degree oven until dry.
Use as garnish for fruit salads or cocktails.
