|Rhubarb||1 1⁄2 Cup (24 tbs), finely diced|
|Sugar||1 Cup (16 tbs)|
|Fresh mint sprigs||8 , very finely chopped|
|Tarragon vinegar||1⁄2 Cup (8 tbs)|
1) In a saucepan, sprinkle sugar over rhubarb and allow to stand for minimum 1 hour, stirring occasionally.
2) Stir in the vinegar and mint, then simmer over a low heat for 20 minutes, until the rhubarb is just tender.
3) Use as required.
