Mint Glazed Cornish Hen

Ingredients
  Finely chopped fresh mint 2 Tablespoon
  Olive oil 2 Teaspoon
  Honey 2 Teaspoon, heated
  Garlic 1 Clove (5 gm), minced
For garnish
  Mint leaves 1 Tablespoon
  Cornish hen 1 1⁄4 Pound, skinned and cut in half
  Salt 1⁄2 Teaspoon
  Lemon juice 2 Tablespoon
Directions

MAKING
1 In a small bowl, add chopped mint, oil, honey, and garlic.
2 In 8 x 8-inch nonstick baking pan, place the hen and sprinkle both the sides with salt.
3 Glaze the hen with the mint-honey mixture using a brush and sprinkle with lemon juice.
4 Place in the oven, cut side down and bake at 400 degrees fahrenheit for 25-30 minutes until tender.
5 Remove baking pan from the oven and baste the hen with pan juices.
6 Set the oven control to broil and broil the hen 3 inches from heat source until browned and crisp, for about 1 minute.

SERVING
7 Garnish with mint leaves and serve.
