Pineapple Mint Whip

|Egg whites||2 , beaten until stiff but not dry|
|Confectionery sugar||4 Tablespoon|
|Whipped heavy cream||1⁄2 Cup (8 tbs)|
|Chopped fresh mint||2 Tablespoon|
|Lemon juice||1⁄2 Teaspoon|
|Fresh pineapple/Canned crushed pineapple||3⁄4 Cup (12 tbs), fresh one chopped|
Add the sugar gradually while beating the egg whites.
Fold in the whipped cream and the mint.
Stir the lemon juice into the pineapple and combine the mixtures.
Chill well and garnish with a sprig of fresh mint when serving.
