Green Pea, Mint and Feta Dip
|Frozen peas||7 Ounce (200 Grams)|
|Mint sprig||1 Large|
|Feta cheese||4 Ounce, drained and diced (125 Grams)|
|Spring onions||3 , finely chopped|
|Lemon juice||2 Tablespoon|
|Olive oil||2 Tablespoon|
|Greek yogurt||3 Ounce (75 Grams)|
|Freshly ground black pepper||To Taste|
1. The evening before, mix together the peas and mint in a heatproof bowl, pour boiling water over them, leave to stand for 5 minutes then drain.
2. Combine the peas with the rest of the dip ingredients and puree either in a food processor or in a bowl using a hand-held blender. Check the seasoning.
3. Toast the flat breads and slice while still warm.
