Mint Surprise Cookies
|Butter/Margarine||1 Cup (16 tbs), softened|
|Sugar||1 Cup (16 tbs)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
|All purpose flour||3 Cup (48 tbs)|
|Cornflake crumbs||1⁄2 Cup (8 tbs)|
|Solid chocolate mint candy wafers||5 Dozen|
Cream butter and sugars until light and fluffy.
Add eggs and vanilla extract; beat well.
Combine flour, soda, and salt; add to creamed mixture along with cornflake crumbs: mix well.
Shape about 1 tablespoon dough around each chocolate wafer.
Place about 2 inches apart on lightly greased cookie sheets.
Bake at 375° for about 10 minutes.
