Sugar Snap Peas With Mint

To make yourself happy you need to eat nothing but delicious food. And one way to do is to cook Sugar snap peas with mint. Mint with that delightful heady aroma is an integral part of sugar snap peas with mint. Toasted almonds are added to give a nutty texture to the dish. It now time to give a minty treat to your tastebuds
  Sugar snap peas 1 1⁄4 Pound
  Orange juice 3 Tablespoon
  Extra virgin olive oil 2 Teaspoon
  Orange segments 1⁄2 Cup (8 tbs)
  Mint leaves 8
  Slivered almonds 2 Teaspoon, toasted
  Salt To Taste
  Black pepper To Taste

In a medium saucepan, blanch the peas in rapidly boiling water for 2 minutes, or until bright green and crisp-tender.
Plunge immediately into ice water.
Turn into a large bowl.
In a small cup, whisk together the orange juice and oil.
Pour over the peas and toss to coat.
Gently toss in the orange segments, mint and almonds.
Add salt and pepper to taste.
