Sugar Snap Peas With Mint
|Sugar snap peas||1 1⁄4 Pound|
|Orange juice||3 Tablespoon|
|Extra virgin olive oil||2 Teaspoon|
|Orange segments||1⁄2 Cup (8 tbs)|
|Slivered almonds||2 Teaspoon, toasted|
|Black pepper||To Taste|
In a medium saucepan, blanch the peas in rapidly boiling water for 2 minutes, or until bright green and crisp-tender.
Plunge immediately into ice water.
Turn into a large bowl.
In a small cup, whisk together the orange juice and oil.
Pour over the peas and toss to coat.
Gently toss in the orange segments, mint and almonds.
Add salt and pepper to taste.
