Mincemeat Sandwiches

Ingredients
  Shortening 1 1⁄3 Cup (21.33 tbs)
  Sugar 1 1⁄2 Cup (24 tbs)
  Eggs 2
  Vanilla 1 Teaspoon
  Grated orange rind 1 Teaspoon
  Sifted all purpose flour 3 1⁄2 Cup (56 tbs) (Robin Hood)
  Baking powder 3 Teaspoon
  Salt 1⁄2 Teaspoon
  Milk 3 Tablespoon
  Mincemeat 1 1⁄2 Cup (24 tbs)
  Grated orange rind 2 Teaspoon
  Chopped maraschino cherries 1⁄3 Cup (5.33 tbs)
  Chopped walnuts 1⁄3 Cup (5.33 tbs)
Directions

Cream shortening and sugar thoroughly.
Add eggs, beat until light and fluffy.
Mix in vanilla and orange rind.
Mix together flour, baking powder and salt, stir into creamed mixture along with milk.
Divide in half.
Chill for 2 hours.
Combine mincemeat, orange and lemon rinds, maraschino cherries and chopped nuts.
Roll out dough 1/8 inch thick on lightly floured surface and cut with 2 3/4 inch cutter.
Cut small circle in centre of half the cookies.
Place plain cookies on ungreased baking sheet.
Place 2 teaspoons filling on each.
Top with a cutout cookie, press edges with fork.
Bake in moderate oven (375° F.) about 12 minutes.
