|Shortening||1 Cup (16 tbs)|
|Sugar||2 Cup (32 tbs)|
|Eggs||3 , beaten|
|Cake flour||4 Cup (64 tbs)|
|Mincemeat||1 Cup (16 tbs)|
|Nuts||1⁄2 Cup (8 tbs), chopped|
Cream shortening and sugar thoroughly.
Add the well beaten eggs to the creamed mixture and enough of the flour to keep it from curdling.
Mix well and add the mincemeat.
Sift the remaining flour with the other dry ingredients and add.
The exact amount of flour needed varies with the amount of liquid in the mincemeat, however, the dough should be the consistency of a rolled dough.
Add the chopped nuts and drop from a teaspoon onto a greased cookie sheet.
Allow 2 inches between each cookie for spreading.
Bake at 375Â°F. 12 minutes.
