Pear Mincemeat

  Pears 7 Pound, peeled, cored, and cut into eighths
  Lemons 2 , unpeeled and cut into eighths
  Oranges 2 , unpeeled and cut into eighths
  Raisins 2 Cup (32 tbs)
  Sugar 6 Cup (96 tbs)
  Salt 1 Tablespoon
  Ground allspice 1 Tablespoon
  Ground cinnamon 1 Tablespoon
  Ground nutmeg 1 Tablespoon
  Ground cloves 1 Tablespoon
  Vinegar 1⁄2 Cup (8 tbs)

Position knife blade in food processor bowl.
Add about 1 cup pears; process until finely chopped.
Repeat with remaining fruit.
Combine chopped fruit and remaining ingredients in a Dutch oven.
Bring to a boil; reduce heat and simmer, uncovered, 30 minutes.
Pour hot mixture into hot sterilized jars, leaving 1/4-inch headspace.
Cover at once with metal lids, and screw bands tight.
Process in boiling-water bath for 25 minutes.
Serve as a relish, or use to make Pear Mincemeat Pie and Pear Mincemeat Cookies
