|Brown sugar||3 Pound (Firmly Packed)|
|Cinnamon||1 1⁄2 Teaspoon|
|Tart apples||6 Quart|
|Seeded lexica/Muscat raisins||1 1⁄2 Pound|
|Sultana raisins||1 Pound|
|Chopped mixed peel||3⁄4 Pound|
|Blanched almonds||1⁄2 Pound, cut fine|
|Lemon||3 , juiced and grated rind|
|Oranges||3 , juiced and grated rind|
|Ground suet||1⁄2 Pound|
Combine meat and water in a saucepan.
Bring to a boil; then cover, and simmer 10 minutes.
Drain meat, and reserve juice.
Combine meat juice, cider, 2 pounds of the sugar and the next 4 ingredients.
Bring to a boil, and simmer for 15 minutes.
Remove from heat.
Peel and dice the apples into a large kettle.
Add the meat, remaining sugar and other ingredients.
Add molasses-syrup mixture, and stir well.
Cook for 20 minutes.
Ladle into sterilized sealers, and process in a boiling-water bath for 30 minutes.
