Old-fashioned Mincemeat

Ingredients
  Ground beef 1⁄2 Pound
  Water 1 Cup (16 tbs)
  Cider 3 Cup (48 tbs)
  Brown sugar 3 Pound (Firmly Packed)
  Cinnamon 1 1⁄2 Teaspoon
  Mace 1 Teaspoon
  Salt 1 Tablespoon
  Molasses 1 Pint
  Tart apples 6 Quart
  Seeded lexica/Muscat raisins 1 1⁄2 Pound
  Currants 3 Pound
  Sultana raisins 1 Pound
  Chopped mixed peel 3⁄4 Pound
  Blanched almonds 1⁄2 Pound, cut fine
  Lemon 3 , juiced and grated rind
  Oranges 3 , juiced and grated rind
  Ground suet 1⁄2 Pound
Directions

Combine meat and water in a saucepan.
Bring to a boil; then cover, and simmer 10 minutes.
Drain meat, and reserve juice.
Refrigerate meat.
Combine meat juice, cider, 2 pounds of the sugar and the next 4 ingredients.
Bring to a boil, and simmer for 15 minutes.
Remove from heat.
Peel and dice the apples into a large kettle.
Add the meat, remaining sugar and other ingredients.
Add molasses-syrup mixture, and stir well.
Cook for 20 minutes.
Ladle into sterilized sealers, and process in a boiling-water bath for 30 minutes.
