Baked Mincemeat Pudding
|Sifted flour||2 1⁄4 Cup (36 tbs)|
|Baking powder||2 1⁄2 Teaspoon|
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Prepared mincemeat||2 Cup (32 tbs)|
|Milk||1⁄4 Cup (4 tbs)|
Sift flour with baking powder and salt.
Cream butter; add sugar gradually, creaming well.
Add eggs; beat until light and fluffy.
Add dry ingredients alternately with mincemeat and milk, stirring after each addition to blend well.
Pour into greased and floured 2-quart tube pudding mold.
Bake at 325 degrees for 1 hour or until done.
Let stand in mold for 10 minutes before turning out.
Serve warm; top with vanilla ice cream if desired.
