Ingredients
  Beef chuck 1 Pound, cut up
  Tart apples 2 Pound, pared, cored
  Seeded raisins 2 2⁄3 Cup (42.67 tbs)
  Currants 2 1⁄2 Cup (40 tbs)
  Citron 1⁄4 Pound
  Ground suet 1⁄4 Pound
  Salt 2 Teaspoon
  Nutmeg 1 Tablespoon
  Granulated sugar 2 Cup (32 tbs)
  Strong coffee beverage/Cider 1 Cup (16 tbs)
  Powdered cloves 1 Tablespoon
  Cinnamon 1 Tablespoon
  Meat liquor 1 Cup (16 tbs)
Directions

Cook meat in boiling water to cover, in a covered kettle, until tender; cool in the meat liquor.
Then put meat through a food chopper, reserving 1 c of the liquor.
Put apples, raisins, currants, and citron through the food chopper.
Add ground meat, ground suet, and remaining ingredients.
Simmer, uncovered, slowly for about 1 hr., stirring frequently to prevent burning.
Pour at once to overflowing into clean hot jars.
Set on wire rack in deep covered kettle with boiling water to cover tops of jars at least 1.
Process 30 min., counting time from moment active boiling resumes.
Remove and immediately adjust seal according to manufacturer's directions.
