|Chopped pared apples||2 Quart|
|Seeded raisins||1 Pound|
|Grated lemon rind||4 Tablespoon|
|Firmly packed brown sugar||5 Cup (80 tbs)|
|Cider vinegar||2 Cup (32 tbs)|
|Cold water||2 Cup (32 tbs)|
|Ground allspice||1⁄4 Teaspoon|
|Powdered cloves||1⁄4 Teaspoon|
Combine all ingredients in a large kettle.
Simmer, uncovered, about 2 1/2 hrs., or until very thick, stirring frequently to prevent burning.
Pour at once to overflowing into clean hot jars.
Adjust covers and process as in Mincemeat I.
