Green Tomato Mincemeat

  Green tomatoes 3 Quart
  Cold water 8 Cup (128 tbs)
  Margarine 1 Cup (16 tbs)
  Raisins 4 Cup (64 tbs)
  Currants 2 Cup (32 tbs)
  Salt 1 Teaspoon
  Cinnamon 1 Teaspoon
  Nutmeg 1 Teaspoon
  Mace 1 Teaspoon
  Cloves 1 Teaspoon
  Honey 3 3⁄4 Cup (60 tbs)

Wash and dry green tomatoes.
In a meat grinder with a coarse blade, grind tomatoes, or chop them coarsely in a food processor.
In a large kettle, bring water to a boil.
Add ground tomatoes and boil for 1 hour.
Pour into a fine-mesh plastic colander and allow to drain overnight.
In a large enamel kettle, combine drained tomato pulp, margarine, raisins, currants, vinegar, salt, cinnamon, nutmeg, mace, and cloves.
Bring to a boil, reduce heat, cover, and simmer for 2 hours.
Add honey and cook for 1 5 minutes more, stirring frequently.
Pour into sterilized jars and seal.
