Green Tomato Mincemeat

Ingredients
  Cored and green tomatoes 2 Quart, chopped
  Salt 1 Tablespoon
  Orange peel 3 Tablespoon, grated
  Orange 2⁄3 Cup (10.67 tbs), peeled seeded and chopped
  Pared apples 2 1⁄2 Quart, chopped
  Raisins 1 Pound
  Chopped suet 1 1⁄2 Cup (24 tbs)
  Packed brown sugar 3 1⁄2 Cup (56 tbs)
  Vinegar 1⁄2 Cup (8 tbs)
  Cinnamon 2 Teaspoon
  Nutmeg 1 Teaspoon
  Cloves 1 Teaspoon
  Ginger 1⁄2 Teaspoon
Directions

Sprinkle salt over tomatoes; let stand 1 hour.
Drain.
Cover tomatoes with boiling water; let stand 5 minutes.
Drain well.
Combine all ingredients in a large sauce pot.
Bring to a boil.
Pour hot into hot jars, leaving 1-inch head space.
Remove air bubbles.
Adjust caps.
Process pints and quarts 25 minutes at 10 pounds pressure.
