Bird Milk Or Floating Island
|Vanilla extract||1 Teaspoon|
|Eggs||10 , separated|
|Powdered sugar||5 Tablespoon|
Heat milk in casserole together with sugar and 1/2 piece vanilla bark broken into small pieces.
Beat egg whites until stiff.
When milk begins to boil, add the whites (by tablespoons) to the slowly boiling milk.
Boil about 1 to 2 minutes, then gently with a spatula turn the foam over, but be careful not to break it.
When nice and firm on both sides, lift out carefully and place on a large serving plate.
In another pot, combine egg yolks, powdered sugar and a few drops of vanilla extract.
Beat very well in only 1 direction for 15 to 20 minutes.
Place the pot on the fire and while constantly stirring in 1 direction with the left hand, add the milk in which the whites have been boiled.
Continue to stir in 1 direction until the mixture gets thicker.
As soon as the mixture comes to a boil, immediately remove from the fire, but continue the stirring until it is cool.
Put this mixture into a large glass dish, then add the egg white foam.
Decorate with seedless raisins or with fresh cherries, strawberries or raspberries.
If these fruits are not in season, use instead the fruit taken out of preserves.
Place in refrigerator.
