|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Fresh lemon juice||1 1⁄4 Cup (20 tbs), strained|
|Lemon zest||2 Tablespoon, grated|
Melt butter in top of double boiler over simmering water.
Add remaining ingredients and blend well.
Continue cooking, stirring frequently, until thick and smooth, about 25 to 30 minutes.
Ladle into sterilized jars and seal with lids
