Vegetarian Burger And Sandwich
|Sprouted grain bread||1 Medium|
|For pesto||4 Tablespoon|
|Sliced tomato||1 Medium|
|Firm tofu||1⁄4 Pound|
|Soy mayonnaise/Low fat mayonnaise||1⁄2 Tablespoon|
|Spike seasoning||1 Dash|
|Dijon mustard||1 Teaspoon|
|Low fat cheese/Soy cheese||1⁄2 Cup (8 tbs)|
|Sprouted grain bread loaf||1 Medium|
|Chopped greens||1 Cup (16 tbs)|
For the burger:
Cook you favorite frozen veggie burger in a skillet on medium heat for 4 minutes on each side.
Add the low fat cheese or soy cheese just before the last 2 minutes and cook.
Add the burger on the bread and spread the pesto on it.
Top with the tomato slices and you have the open face veggie burger.
For the tofu salad and sandwich:
Mix the tofu and mayonnaise together in a bowl.
Add the spike seasoning. Mix.
Add the Dijon mustard. Mix.
Spread the tofu mix on a piece of bread generously.
Add on some chopped greens.
Top with a slice of cheese.
