Classic Lemon Curd

Ingredients
  Butter 4 Ounce
  Granulated sugar 12 Ounce
  Lemons 3 , rinded and juiced
  Egg yolks 8
Directions

MAKING
1. In a basin, add the butter, sugar, grated lemon rind and trained lemon juice and place over a sucepan filled half with water
2. Stir once in a while till the butter melts and the sugar dissolves; add lightly mixed egg yolks
3. Keep stirring over the simmering water until it thickens; remove and pour into warm, clean jars and seal while still hot

SERVING
4. Serve/Use as appropriate
