Satsuma And Lemon Curd

Ingredients
  Satsumas 3 , grated
  Lemon 1 , juiced and rind grated
  Butter 4 Ounce, cut into pieces (100 Gram)
  Caster sugar 9 Ounce (250 Gram)
  Eggs 3 (At Room Temperature)
  Egg yolk 1 (At Room Temperature)
Directions

GETTING READY
1. In a large heatproof bowl, tip in the fruit rinds, juices and butter
2. Heat the bowl in the microwave on HIGH For 3 minutes
3. Add the sugar to the bowl carefully and microwave on HIGH again for a further 2 minutes, stir well and set aside till required
4. Prepare sterilized jars

MAKING
5. In a large bowl, add the eggs and the egg yolks
6. Blend quickly and thoroughly till you have a yellow ribbon of eggs
7. Add the egg mixture to the hot Satsuma and lemon mixture and blend well till completely incorporated
8. Microwave this mixture eon LOW (30%) heat for 12 minutes
9. It is very essential to stir from edge to center during the cooking process every 3 minutes or until the mixture is creamy and thick

FINALIZING
10. Tip the hot mixture into the jars
11. Cover, seal and label
12. Set aside to cool in a cool dark place or in the refrigerator till required

SERVING
13. Serve as-is
