Lemon Curd

Ingredients
  Butter 4 Ounce
  Granulated sugar 8 Ounce
  Eggs 3 Small (Size 3)
  Egg yolk 1
  Lemons 3 Medium
Directions

MAKING
1. In a double saucepan, melt butter
2. Beat eggs and yolk together and add to molten butter along with sugar and grated rind and juice of the lemons
3. Cook without boiling and allow to thicken till it can coat the back of a spoon
4. Pour into sterilised jars and cover; be sure to use within two weeks

SERVING
5. Serve as appropriate
