|Grated lemon rind||4|
|Sugar||1 Pound (450 Gram)|

1) In an ovenproof bowl, add butter, lemon rind, lemon juice and sugar, blend well.
2) Gradually beat in the eggs into the mixture.
3) Place the bowl in a pan of simmering water, stir until thick.
4) Cool and store refrigerated in clean, dry jars.
5) Serve when desired
