Orange Curd Cake
|Ricotta cheese||1 Pound, sieved|
|Sugar||1 Cup (16 tbs)|
|Eggs||4 , separated|
|Orange juice||3 Tablespoon|
|Orange rind||2 Teaspoon, finely grated|
Beat the cheese, sugar, semolina, egg yolks and orange juice and rind together.
Stir in the peel.
Beat the egg whites until stiff but not dry, then carefully fold into the cheese mixture until just evenly blended.
Spoon into a greased 9-inch loose-bottomed deep cake pan.
Bake in a preheated 350° oven for 30-35 minutes, until just set in the center.
Leave the cake to cool slightly in the pan before removing it, still on the base of the pan.
Carefully slide the cake from the base onto a wire rack covered by a sheet of wax paper, so that it remains the right way up.
Leave to cool.
