Grilled Kiwi With Lemon Curd

  Sugar 1 Cup (16 tbs)
  Eggs 2 , lightly beaten
  Egg whites 2 , lightly beaten
  Fresh lemon juice 1⁄2 Cup (8 tbs)
  Salt 1⁄8 Teaspoon
  Margarine/Butter 1⁄2 Cup (8 tbs), cut into 1/ 2-inch pieces
  Lemon zest 2 Teaspoon
  Kiwis 8 , peeled and cut in half
  Lemon zest 1 Teaspoon
  Margarine/Butter 1⁄4 Cup (4 tbs), melted

Mix together the sugar, eggs, egg whites, juice, and salt in a saucepan.
Simmer, stirring often until the mixture thickens, about 12 minutes.
Do not let the mixture boil.
Working quickly, pour mixture into a bowl.
Whisk in the margarine, a few pieces at a time until smooth; add the lemon zest.
Spoon Lemon Curd into a bowl.
Cover and refrigerate until serving time.
Mix margarine with lemon zest.
Thread kiwis onto skewers and brush with margarine mixture.
Preheat the grill.
Set skewers on the grid over ashen coals.
Grill for about 5 minutes, turning often.
