Lemon Curd

Ingredients
  Butter 1⁄2 Cup (8 tbs)
  Warmed honey 1⁄2 Cup (8 tbs)
  Grated lemon peel 4 Tablespoon (Of About 2 Lemons)
  Lemons juice 3
  Eggs 6 , lightly beaten
  Salt 1⁄8 Teaspoon
Directions

In the top of a double boiler, combine all ingredients.
Mix well.
Set over boiling water and cook (stirring constantly with a wooden spoon) for 15 to 20 minutes, or until mixture is thick and smooth.
Cool and store in a jar in refrigerator.
