Lemon Curd

  Eggs 3
  Sugar 1 Cup (16 tbs)
  Fresh lemon juice 1⁄2 Cup (8 tbs)
  Butter 1⁄4 Cup (4 tbs), melted
  Lemon peel 1 Tablespoon, grated

In the top of a double boiler, beat eggs and sugar.
Stir in lemon juice, butter and lemon peel.
Cook over simmering water for 15 minutes or until thickened.
