Curd Cheese Cakes
|Short pastry||4 Ounce (Using Flour)|
|Cottage cheese||1⁄2 Pound|
|Melted butter||1 Ounce|
|Grated nutmeg||1 Tablespoon|
Roll the pastry and line the flan ring or sandwich tin as in Nos. 812 or 813.
Mix the cheese, melted butter, currants, and sugar in a basin.
Add the beaten egg and the lemon rind.
Pour into the pastry case and sprinkle grated nutmeg on top.
Bake in a hot oven for 30-45 minutes.
Alternatively, the mixture may be made into small tarts and baked for about 20 minutes.
