Grilled Mojo Chicken With Mango-Papaya-Cilantro Salsa
MAKING 1 In a bowl add all the ingredients. 2 Mix the ingredients thoroughly. 3 Add salt to taste . 4 Chill for at least 30 minutes before serving. SERVING 5 Serve cold.
Mango Or Papaya Salsa
MAKING 1 Slice the half of the papaya into 1 4 inch cubes. 2 In a blender add the other half of the papaya sugar and cinnamon. Blend to get a smooth paste. SERVING 3 Add the papaya cubes in a serving bowl. Pour the papaya puree over it. Mix well to combine. 4
Combine first 4 ingredients in a medium bowl toss well. Combine lemon juice lime juice and honey stir well. Pour over papaya mixture toss gently. Cover and chill at least 2 hours.
Thoroughly combine all the ingredients together in a mixing bowl.
In a bowl combine well the papaya the shallot the jalapeno the coriander the salt and 2 tablespoons of the lime juice let the salsa stand covered and chilled for at least 1 hour and up to 3 hours and stir in the remaining 1 tablespoon lime juice.
