Chipotle Dip

Chipotle dip is a spicy dipping sauce made with chipotle chilies and other ingredients like mayonnaise, sour cream, lemon juice and scallions. It is served with snack foods such as crackers or chips. Chipotle chilies are actually smoke dried jalapenos, and have a dried and shriveled appearance. The dip is a part of Mexican and Mexican-American cuisines.

 

Chipotle Dip Preparation Overview

Ingredients: Ingredients suggested by the chipotle dip recipe are chipotle chilies in adobo sauce, scallions, mayonnaise, adobo sauce, sour cream and lemon juice. Adobo sauce is a sauce made with ground chilies, herbs and vinegar.

Method of Preparation: Scallions are chopped and chipotles are minced using protective gloves, after which, all the ingredients are whisked together to prepare the dip. It is then stored in the refrigerator. The dip keeps well for up to three days.

Chipotle Dip Recipe Variations

  • Bacon Cheddar Chipotle Dip: It is made with mayonnaise, sour cream, chipotle peppers in adobo, bacon pieces and Cheddar cheese. Finely chopped chipotle peppers are mixed with mayonnaise and sour cream, and a mixture of finely shredded sharp Cheddar cheese and bacon pieces is folded into this. The dip thus prepared is chilled before serving.
  • Black Bean, Corn & Chipotle Dip: The dip is prepared by sautéing chopped onions in heated olive oil, followed by garlic, black beans, refried black beans, chipotle peppers (chopped), corn, chili powder and cumin powder. The ingredients are combined with a wooden spoon and cooked on medium-low heat for a few minutes, after which it is transferred to a baking dish, topped with grated Cheddar cheese, and baked till the cheese is bubbly. After it cools down a bit, it is topped with chopped cilantro, sliced black olives, shredded lettuce and diced tomato. Cheese can be omitted from the recipe for people who wish to go for a vegan or dairy free dip.
  • Raspberry Chipotle Dip: This is a sweet sauce made by cooking together raspberries, pureed chipotle peppers in adobo sauce, garlic, red wine vinegar, sugar and a gelling agent called pectin. It is served with crackers.
