The first step to prepare chalupa is to heat vegetable oil in a small pan. The oil is tested for the correct temperature by putting in a small piece of tortilla. If the oil immediately bubbles in a frantic manner and the bread quickly becomes crispy then the oil is at the right temperature. This is important due to a low temperature which will result in the boiling of tortilla, rather than frying, and will produce an unpleasant fatty and soggy chalupa shell.
