Taco Salad

The trick to a delicious dinner salad is having a mixture of flavours and textures that will make each bite just a little different than the last. Blending finely chopped mushrooms with meat is easy! Mushrooms and ground meat blend seamlessly to add an extra serving of vegetables to the plate by enhancing, extending or replacing the meat. Finely chopped mushrooms look similar and blend seamlessly with meat, so classics can be healthier without losing taste or satisfying texture
Ingredients
  Crimini mushrooms 8 Ounce
  Onions 1 , chopped
  Canola oil 1 Tablespoon
  Lean ground beef 1⁄2 Pound
  Tex-mex seasoning 2 Tablespoon
  Red pepper 1 , chopped
  Diced tomatoes 1 Can (10 oz)
  Shredded lettuce 6 Cup (96 tbs)
  Shredded cheddar cheese 1⁄2 Cup (8 tbs)
  Sour cream 1⁄4 Cup (4 tbs) (optional)
  Avocado 1 , chopped
  Tomato paste 2 Tablespoon
  Chopped cilantro 1⁄4 Cup (4 tbs)
For mushrooms canada spice blend:
  Dried thyme leaves 1⁄2 Teaspoon
  Dried oregano leaves 1⁄2 Teaspoon
  Dried minced garlic 1⁄4 Teaspoon
  Dried minced onion 1⁄4 Teaspoon
Directions

MAKING:

  1. In a food processor, chop mushrooms and onions.
  2. Drizzle oil in a saucepan and brown ground beef. Add mushroom mix, chopped red pepper, Tex-Mex seasoning blend and 1 tablespoon of mushrooms Canada spice blend and mix the contents completely.
  3. Add diced tomatoes, tomato paste and simmer until they thicken.

SERVING:

  1. Top the mixture on shredded lettuce. Garnish with cheese, avocado, sour cream and cilantro and serve.
