Poblano Pepper Baked Egg

A quick and easy baked egg dish - Mexican style...
Ingredients
  Poblano peppers 2 Large
  Cheese 1⁄2 Cup (8 tbs)
  Diced tomato 1 Cup (16 tbs)
  Eggs 4
  Salt To Taste
  Pepper To Taste
Directions

Roast off the chillies and chop them put them on the bottom of the buttered ramekins. Top with a bit of tomato, then cheese - crack the eggs on top then cover with some more cheese... Bake at 400 for 10-15 minutes. Eat and enjoy

This type of dish is fun to make in a large pan, bake and cut into squares for a party!

They are very easy - but you can throw just about anything under a baked egg and it will turn out good... They are good in a big casserole
