Sardines With Fresh Tomato Chilli Salsa

  Sardines 12 , cleaned
  Olive oil 1 Tablespoon
  Salt To Taste
  Freshly ground black pepper To Taste
For salsa
  Tomatoes 6 , skinned, seeded and finely chopped
  Onion 1⁄2 Small, grated
  Red chilli 1 , seeded and finely chopped
  Chopped parsely 15 Milliliter (1 Tablespoon)
  Snipped chives 15 Milliliter (1 Tablespoon)
  Clear honey 1 Teaspoon
  Lime 1 , rind grated and juiced
  Lime wedges 4 (For Serving)

Place the sardines on a hinged wire cooking rack.
Brush with oil and season with salt and pepper.
Close, turn over, open the rack and oil and season the other sides.
Close the rack again.
Put all the salsa ingredients in a bowl with a little salt and pepper and mix well.
Leave to stand until ready to serve.
Place the fish in their rack on the barbecue and cook for about 3 minutes on each side until golden brown and cooked through.
