Spicy Mexican Pork
|Onion||1 Medium, chopped|
|Garlic||1 Clove (5 gm), minced|
|Lard/Vegetable oil||2 Tablespoon|
|Mild chili powder||3 Tablespoon|
|Peanut butter||1⁄4 Cup (4 tbs)|
|Meat stock||3 Cup (48 tbs)|
|Pork||3 Pound, cubed, cooked|
Saute the onion and garlic in the lard in a large skillet until tender.
Add the chili powder, peanut butter, cumin, oregano and salt.
Add the meat stock a little at a time, stirring constantly.
Blend until smooth.
Cook over low heat until slightly thickened, stirring constantly to avoid burning.
Pour over the cooked pork.
Heat through before serving.
