Mexican B.L.T. Appetizers
|Canadian bacon slices||8|
|Chopped seeded tomatoes||1 1⁄2 Cup (24 tbs)|
|Chopped onion||4 Tablespoon|
|Chopped fresh cilantro leaves||4 Tablespoon|
|Fat free mayonnaise||1⁄4 Cup (4 tbs)|
|English muffins||4 , split and lightly toasted|
|Shredded monterey jack cheese||1 Cup (16 tbs)|
Heat Canadian style bacon in large skillefrover medium heat until warm.
(If using bacon, cook in large skillet over medium heat until crisp.Drain on paper towels.)
Cut each slice in half.
Meanwhile in medium bowl, combine tomato, onion and cilantro.
Spread mayonnaise; on muffins.
Place muffins on baking sheet.
Top with tomato mixture, reserved bacon and the cheese.
Broil 3 4 inches from heat source about 2 minutes or just until cheese melts.
