Beef And Cornmeal Tamale Pie
|Cornmeal||3⁄4 Cup (12 tbs)|
|Boiling water||1 1⁄2 Cup (24 tbs)|
|Milk||2 1⁄4 Cup (36 tbs)|
|Onion||1 , chopped|
|Green pepper||1 , chopped|
|Ground beef||1 Pound|
|Tomato paste||1 Can (10 oz)|
|Garlic salt||1 Dash|
Stir cornmeal and salt into boiling water in top of double boiler.
Cook, stirring until mixture begins to thicken; add milk.
Cook, covered, over hot water for 30 minutes.
Cook onion and pepper slowly in shortening until soft.
Add meat and brown.
Add tomato paste and seasonings.
Line bottom of greased 9 or 10-inch pie tin with cornmeal mixture, reserving enough to cover top of pie.
Add meat mixture; cover with remaining cornmeal.
Bake at 350 degrees approximately 45 minutes.
