Spicy Pork Quesadillas

The pork quesadillas are a spicy and meaty take on the traditional cheese and tortilla quesadillas. Prepared with pork sausage, cheese, tortillas and jalapeno peppers, the pork quesadillas are spiced with chili powder, red pepper and is served with salsa.
  Bulk pork sausage 1 Pound
  Chili powder 1 Tablespoon
  Ground red pepper 1⁄4 Teaspoon
  Shredded jack cheese 4 Ounce
  Jalapeno pepper 1 , seeded, thinly sliced
  Flour tortillas 8

Preheat oven to 400 degrees F.
Crumble pork sausage in skillet.
Cook until sausage is no longer pink.
Remove sausage with slotted spoon onto several layers of paper toweling.
Pat meat dry with paper towels.
Discard drippings; wipe out skillet.
Return sausage to skillet, stir in chili powder and red pepper.
Place 4 tortillas on baking sheet.
Divide meat mixture and cheese evenly over the 4 tortillas.
Sprinkle on jalapeno pepper, if desired.
Place remaining tortillas over sausage mixture, pressing down firmly.
Spray tops of tortillas lightly with vegetable cooking spray.
Bake in 400 degrees F oven 7-10 minutes or until lightly browned.
To serve, cut each quesadilla into 6 wedges.
Serve with salsa, if desired.
