Mexican Tray Salad

Ingredients
  Cucumber 1 Large, scored, sliced
  White wine vinegar 3 Tablespoon
  Olive oil 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Butter 1 Tablespoon
  Lettuce 1⁄2 Cup (8 tbs)
  Navel oranges 3 , peeled and thinly sliced
  Sweet red onion 1 , peeled and sliced
  Avocado 1 Large, peeled and sliced
  Lemon juice 2 Teaspoon
  Spicy orange dressing 1 Tablespoon
Directions

Place cucumber in a bowl and mix with vinegar, oil, and salt; let stand 1 hour.
Line a large tray with greens and arrange on it in separate sections the sliced cucumber (use slotted spoon), sliced oranges onion, and avocado, drizzled with lemon juice.
Spoon over it Spicy Orange Dressing.
Contains about 110 calories per serving.
