Mexican Pork Chops is a unique and winning pork preparation that is perfect for your dinner parties. Surprise your guests with this exquisite dish. I am sure they will love the Mexican Pork Chops.
  Pork loin chops/Pork rib chops 4 (1 Inch Thick)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Green pepper 1 Medium (Cut Into 4 Rings)
  Uncooked instant rice 4 Tablespoon
  Canned stewed tomatoes 16 Ounce

Brown meat over medium heat.
Season with salt and pepper.
Top each chop with a green pepper ring; fill each ring with 1 tablespoon rice.
Carefully pour 1/4 cup stewed tomatoes on rice in each ring.
Pour remaining tomatoes into skillet.
Cover tightly; simmer 1 hour or until done.
Add a small amount of water if necessary.
