Chili Con Quesco

Chili Con Quesco - the name might sound weird, but the taste is just yumm! I tried this last week and it was an instant hit. Chili Con Quesco combines the richness of tomato sauce, cheese and chillies. Just give it a try.
  Minced onion 1⁄2 Cup (8 tbs)
  Butter 2 Tablespoon
  Tomato sauce 8 Ounce (1 can)
  Canned green chilies 4 Ounce, chopped (1 can)
  Salt 1 Teaspoon
  Tabasco sauce 1⁄4 Teaspoon
  Large curd cottage cheese 1 Cup (16 tbs)
  Sharp cheddar cheese 8 Ounce, grated

Saute onion in butter until tender but not brown.
Add tomato sauce, chopped chilies and salt.
Simmer for 10 minutes.
Stir in Tabasco sauce, cottage cheese and Cheddar cheese; cook slowly until cheese melts.
Serve warm as dip for raw carrot sticks, cauliflowerets, cucumber slices, pepper strips and cherry tomatoes or tomato wedges.
Texture and flavor are best if served immediately
