Chili Con Quesco
|Minced onion||1⁄2 Cup (8 tbs)|
|Tomato sauce||8 Ounce (1 can)|
|Canned green chilies||4 Ounce, chopped (1 can)|
|Tabasco sauce||1⁄4 Teaspoon|
|Large curd cottage cheese||1 Cup (16 tbs)|
|Sharp cheddar cheese||8 Ounce, grated|
Saute onion in butter until tender but not brown.
Add tomato sauce, chopped chilies and salt.
Simmer for 10 minutes.
Stir in Tabasco sauce, cottage cheese and Cheddar cheese; cook slowly until cheese melts.
Serve warm as dip for raw carrot sticks, cauliflowerets, cucumber slices, pepper strips and cherry tomatoes or tomato wedges.
Texture and flavor are best if served immediately
