Mexican Garbanzo Beans
|Onion||1 Medium, coarsely chopped|
|Garlic||2 Clove (10 gm), minced|
|Stalk celery||1 , coarsely chopped|
|Green pepper||1 , coarsely chopped|
|Chopped tomatoes||2 Cup (32 tbs)|
|Cooked chickpeas||1 Cup (16 tbs) (Garbanzo Beans)|
|Dried oregano||2 Teaspoon|
|Dried basil||1 Teaspoon|
|Chili powder||1⁄8 Teaspoon|
In a large skillet, saute onion, garlic, celery, and green pepper in oil until tender.
Add tomatoes and saute briefly.
Combine sauteed vegetables with cooked garbanzo beans and seasonings and cook 30 minutes, or until thickened.
Process in a blender until smooth.
Serve as a spread on bread or crackers.
