These mexican muffins are mild but frehs muffins made with fresh and green cilantro flavored with cumin. Baked with milk, these muffins are soft and moist with a great texture.
1⁄4 Cup (4 tbs)
All purpose flour
2 Cup (32 tbs)
In a medium bowl, whisk together milk, butter and eggs.
In another bowl, combine flour, baking powder, cumin and salt.
Add to milk mixture and stir just until blended.
Stir in cilantro.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven about 15 minutes or until toothpick inserted in center comes out clean and dry.
