Pico De Gallo, Mango Salsa And Salsa Verde

Did you know that Riverside, California is the navel orange capital of the West? Learn more about the citrus origins and a few other interesting tidbits about this inland empire city as well as some of my favorite Tango travel trailer galley features in this episode of the RV Cooking Show – Riverside, CA and a Trio of Salsas.
Ingredients
For pico de gallo:
  Tomatoes 1 Pound, diced (with seeds and liquid)
  Cilantro 1⁄2 Cup (8 tbs), chopped finely
  Jalapeno pepper 1 Medium, chopped
  Sweet onion 1⁄2 Cup (8 tbs), diced
For salsa verde:
  Tomatillos 1 Pound, husked and chopped
  Garlic 6 Clove (30 gm), chopped finely
  Serrano peppers 3 Medium, seeded and finely chopped
  Cider vinegar 1 Tablespoon
  Salt 1 Teaspoon
  Pepper 1 Teaspoon
For mango salsa:
  Ripe mango 1 Medium, cubed
  Red onion 1⁄4 Cup (4 tbs), chopped
  Jalapeno 1 Medium, seeded and chopped
  Orange juice 1⁄4 Cup (4 tbs)
  Lemon 1⁄2 Medium, juice
Directions

MAKING
Pico de Gallo:
1) In a bowl combine all ingredients, tomatoes, cilantro, Jalapeno pepper and sweet onion.
2) Put the lid and cover the bowl.
3) Leave it for at least one hour before eating. And don't refrigerate it.
Salsa Verde:
4) In a bowl mix tomatillos, Cilantro, garlic, Serrano peppers, Cider vinegar, salt and pepper to taste.
5) Put in refrigerator for one hour or overnight.
Mango Salsa:
7) In a large bowl mix ripe mango, cilantro, red onion, jalapeno, orange juice, and juice of fresh lime.
8) Mango salsa is ready to use.

SERVING
9) Pico de Gallo can be served with quesadillas.
10) Salsa Verde can be served with chips.
11) Mango Salsa can be served as a topping with grilled fish.
