Rotisserie Pork Shoulder Roast

Pork shoulder cooked on the rotisserie with an Adobo Tequila wet rub and a slightly spicy dry rub.

Ingredients

Pork shoulder 1/2 Pound (a little more, bone in)
Adobo sauce 1/2 Cup (8 tbs)
Tequila 1/4 Cup (4 tbs) (100% agave)
Mustard sauce 2 Tablespoon (Parkay)
For rub
Raw sugar 1/4 Cup (4 tbs)
Ancho chile 2 Tablespoon
Paprika 2 Tablespoon
Cinnamon 1 Tablespoon
Kosher salt 2 Tablespoon
For spraying
Fresh lime juice 1/4 Cup (4 tbs)
Tequila 1/4 Cup (4 tbs)

Directions

GETTING READY

1. In a bowl, mix together adobo sauce and tequila and spread it on pork.

2. Take a separate bowl and prepare rub by combining sugar, ancho chili, paprika, cinnamon, and salt.

3. Sprinkle the rub generously on pork. Place it in a glass bowl, cover it with plastic wrap and pop it in refrigerator for 3-4 hours or overnight.

4. Preheat Weber to 275 degree F.

MAKING

5. Using kitchen twine tie the meat piece and put it on the rotisserie.

6. Place meat on Weber, cover and cook for 5 hours.

7. After one hour, add more charcoal to your Weber if needed and then spray lemon tequila mixture on pork. Spray the mixture every 20 minutes.

8. After 3 hours of cooking, place meat fat portion down on a piece of foil, squeeze some mustard sauce and pour the remaining lemon tequila mixture on top. Wrap it tight and continue to cook until done.

SERVING

9. Cut in slices and serve hot.
